Yellow Squash Casserole

Serves 8

 

2 lbs. yellow squash, sliced

1 C grated cheese

½ C onions, diced

1 can cream of celery soup

½ C sour cream

½ 6 oz pkg. stuffing mix

½ cube oleo

 

Cook 5 minutes sliced squash and drain. Stir cheese, onions, soup and sour cream. Pour into casserole. Mix oleo and stuffing and sprinkle over top. Bake 35 minutes at 350 degrees.

 

 

I got this recipe from Terry Rose, KennyÕs 1st wife, so IÕve had it a long time. IÕd look up some other recipes on the internet and compare (like proportions). Also, it looks like it would be easy to double. I notice it doesnÕt mention what size pan to bake it in.
