Sweet Potato Salad

 

6 lbs. sweet potato (6 large)

Dice before cooking.

Boil until just barely soft, drain, completely, cool.

4 stalks celery, chopped

1 C walnuts, chopped

1 C raisins

Large can crushed pineapple, squeezed

1 ½ C sour cream

2/3 C mayonnaise

2 T orange peel

1 T chopped crystallized ginger
