Sweet Potato Casserole from the Flemings

 

Preheat oven to 350 degrees.

 

3 C cooked, mashed sweet potatoes

½ C granulated sugar

2 eggs, well beaten

¼ C margarine, melted

½ C milk

1 ½ t vanilla

1 C brown sugar

1/3 C flour

1 C chopped pecans

1/3 C margarine, melted

 

Mix sweet potatoes, granulated sugar, beaten eggs, ¼ C margarine, milk, and vanilla together well and put in greased shallow baking dish.

Mix together brown sugar, flour, chopped pecans and 1/3 C margarine; sprinkle over potatoes. Bake in oven 35 to 40 minutes.
