Stuffing

 

Put ¼ C oleo in heavy pan

1 chopped onion

1 chopped celery

2 C soft bread (cornbread, stale bread, Pepperidge farm)

¼ t salt

1/16 t pepper

¼ t poultry seasoning

 

Melt butter, add onion, celery and cook over medium heat 4 minutes until onion is yellow, not brown. Add bread crumbs which have been mixed with seasonings. Cook 2 minutes, stirring constantly.

Note: If a moist stuffing is desired, add stock after stuffing has cooked 2 minutes.

 

Gravy: To drippings, add flour and brown, add water; could add chicken broth, Kitchen Bouquet for color.

 

 

Note: These amounts are not to be followed exactly. Use almost a whole stick of butter. I usually chop two onions, several stalks of celery and use a big package of Pepperidge Farm Cornbread Stuffing plus some homemade cornbread. Add the seasonings to taste.
