Spinach Mushroom Egg Bake

 

Nonstick cooking spray

12 eggs

½ C butter, softened

1 C whipping cream, half and half, or light cream

2 t dry mustard

½ t salt

1/8 t ground black pepper

1 10 oz. pkg. frozen chopped spinach, thawed and well-drained

1 C chopped mushrooms

1 C shredded cheddar cheese (4 oz.)

1 C shredded mozzarella cheese (4 oz.)

 

Lightly coat a 3-quart rectangular baking dish with nonstick cooking spray; set aside. In a large bowl whisk together eggs, butter, cream, mustard, salt and pepper. Stir in spinach and mushrooms. Transfer to prepared dish. Top with cheese.

Bake in a 350 degree oven for 40 to 45 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.

Makes 8 servings.
