Spinach Dill Salad

Serves 6

 

Dressing:

½ c extra virgin olive oil

¼ c red wine vinegar

¼ c sugar

2 cloves garlic, minced

¼ t salt

¼ t freshly ground pepper

¼ t dry mustard

¼ t onion powder

 

Whisk all ingredients together. Cover and chill

 

Salad:

2 pounds fresh spinach, torn and coarse stems discarded

1 bunch green onions, chopped

½ c toasted slivered almonds

1 pint strawberries, hulled and sliced

¼ c chopped fresh dill.

 

Toss together and add dressing just before serving.

 

 

Serve with salmon topped with s & p, olive oil, and roughly chopped dill.
