Roasted Tomatoes

 

 

Makes 2 cups

 

2 cups grape tomatoes (about 1 pound), halved lengthwise

 

2 T extra-virgin olive oil

 

½ t kosher salt

 

¼ t fresh-ground black pepper

 

Roast the tomatoes: Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside. Toss the tomatoes with the oil, salt, and pepper. Place the dressed tomatoes skin side down in a single layer on the prepared pan. Roast for 25 minutes. Use immediately or store refrigerated for up to 2 days.

 

 

I use these on grilled salmon.
