Ingredients:
1 C. softened butter
3/4 C. light brown sugar
2 tsp. vanilla extract
2 C. all-purpose flour
1 T. butter
1 C. semi-sweet or milk chocolate chips
Optional: Add a small amount of mint OR orange extract to the melted chocolate,
(about 1/2 tsp, or to taste).
Steps:
1. Preheat oven to 325 F. (300 F for dark pans).
2. In a bowl, cream together the 1 cup butter and sugar.
3. Add vanilla extract and flour; mix until smooth.
4. Shape level teaspoons of dough into log shapes.
5. Place on cookie sheet 2 inches apart. Bake for 17 to 19 minutes or until
golden brown. Cool.
6. Microwave chocolate chips and the 1 tablespoon butter for 2 minutes; stir
until smooth.
7. Spread chocolate on flat side of cookie and top with the other.
