Jena Green Beans with Bacon Walnut Dressing

 

8 slices bacon

¼ C vegetable oil

¼ C peanut oil

¼ C red wine vinegar

1 clove garlic, minced

Salt and pepper

½ C walnuts, toasted

1 ½ lbs. green beans

½ red onion thinly sliced

3 mushrooms, sliced

Cook bacon in heavy medium skillet over medium heat until crisp (10 min.). Remove skillet from heat. Drain bacon on paper towels. Cool slightly and crumble into bowl. Stir both oils, vinegar and garlic into bacon drippings in skillet. Season with salt and pepper. Pour over bacon. Mix in nuts. Let stand 1 hour.

Cook beans in large saucepan of boiling water until crisp tender (8 minutes). Drain well. Place beans in serving bowl and pour dressing over and toss. Garnish with onion and mushroom; serve.
