Janet SweetÕs Cheese Cake

 

Line springform pan with parchment or waxed paper.

 

Graham cracker crust:

1 ¼ C graham cracker crumbs

1/3 C brown sugar

¼ C butter

Mix with pastry blender.

Pat in pan on bottom and up the sides about an inch.

Bake at 350 for 10 minutes.

 

1 lb. cream cheese (I use low fat.); cream well. Gradually beat in ¾ C sugar. Add 5 eggs one at a time. Add 1 t vanilla and ½ t almond extract. Pour in crust; cook 35 minutes at 350. Should be set; may puff up some. Take out; turn oven up to 500.

 

Topping:

1 ½ C sour cream (I use low fat.)

½ C sugar

1 t vanilla

½ t almond extract

Mix the above and carefully spread on cake. Bake 5 minutes at 500. Cool.
