Ginger Pancakes
1 C pancake mix
1 t ground ginger
1 t ground cinnamon
1/8 t salt
¾ C whole milk
3 T molasses
1 T vegetable oil
Combine pancake mix, ginger, cinnamon and salt in large bowl. In another bowl whisk together egg, milk, molasses and oil. Stir wet into dry and whisk just to combine. Let batter rest (5 minutes).
Serve with sliced peaches or pears tossed with 1 T brown sugar.
