Chinese Chicken Salad
Dressing:
½ Cup salad oil
1 t sesame oil
1 T soy sauce
1/3 Cup sugar (I use ¼ Cup)
¼ Cup white vinegar (I use rice wine vinegar)
½ t salt
½ t pepper
Salad:
½ Cup slivered almonds
¼ Cup margarine
1 pkg. Chicken flavored Top Ramen Soup Mix
½ Cup sesame seeds
1 head Napa cabbage
6 green onions
3-4 chicken breast halves, cooked, cooled, shredded
½ bunch cilantro
Mix dressing ingredients. Toast almonds in oven. Crumble Ramen noodles and brown in butter with sesame seeds and contents of seasoning packet. Allow to cool to room temperature. Just before serving, shred cabbage and chop green onion, mix with other ingredients, adding dressing to taste. Garnish with cilantro leaves.
